Crust: use a standard one, make one out of 2 cups of cooked rice, 1.5 ounces grated cheese, and egg.  Combine, place in greased pie pan, bake at 425 for 15 minutes.  Alt.  Add Bisquick or generic or use 3 cups grated potatoes bake as above.

Eggs: 3 or 4

Cheese: 4 to 8 ounces grated cheese (about 1 to 2 cups)

Milk: 1 to 2 cups milk, half and half, cream, evaporated milk, or powdered milk with half the water.  May use part sour cream, cottage cheese, or yogurt.

Fillings:  1 to 2 cups combination of meats and/or veggies.  Squeeze out excess liquid.

Seasoning: up to 1 teaspoon salt, ¼  teaspoon pepper, dash nutmeg.  Feel free to experiment.

Making the quiche:  Preheat oven.  Prepare the crust.  Grate cheese and prepare ingredients.  Beat eggs, milk, and seasonings together until just combined.  Spread fillings ingredients in crust, top with grated cheese, cover with egg/milk mixture.  Bake at 425 for 10 minutes.  Lower temp. to 350 for 45 minutes, or until golden brown and slightly puffed, and knife comes out clean.



2 cups minced onions
3 tbsp minced garlic
3 lbs baked potatoes
2.5 cups milk
1/2 cup water
1 can veggie broth (14.5 ounces)
2 teaspoon butter
Butter flavored Pam
Salt and pepper to taste

Bake potatoes @ 400 degrees for 1 hour.  Let cool, and peel.  In large pot sprayed with Pam, melt 2 teaspoons butter over medium low  heat.  Stir in onions and garlic, cover and let simmer for 10 minutes until soft.  Add potatoes, and mash with masher.  Add broth, milk, salt and pepper. Bring to a simmer, stirring occasionally.  At the point, you can freeze several servings.  Allow to thaw in fridge, top with cheese, salsa, etc.




1 or 2 eggs.
1 or 2 servings of thin straight pasta.
1 teaspoon butter or Buttered flavored Pam.
Salt and pepper to taste
Parm. Cheese to taste
Opt. parsley

Boil water, add pasta.  Cook until done.  Drain.  In a small bowl scramble eggs, salt and pepper, and half the cheese.  Melt butter in skillet over medium low heat.  Add egg mixture.  When eggs are about half way scrambled, add pasta.  Continue to cook until eggs are done.  Transfer to plate, sprinkle with cheese and parsley.
